Dehydration of Organic Macadamia Nuts

Our dehydrator at is set at 145 degrees (F) for 1 hour and then decrease it to 105 – 115 degrees thereafter.  This may be a concern to some of you, thinking that we are killing the enzymes at 145 degrees (F). However this is not the case based on information off of the “Excalibur web-site”.   The main reason for this technique is to eliminate any possibility of introducing bacteria. Your health and safety are of our highest concern. We will continue to serve nutrient rich Hawaiian Organic Nuts.

FYI Right now the macadamia nut season is slow, nuts are trickling in but the real; harvest will begin in Sept. If you order macadamia nuts or mac nut butter you might expect a week or so in delays.
