Macadamia nuts take almost as long to grow as baby  in the womb, about 8 months. From flower to nut, macadamia nuts take their time to develop their buttery, sweet, and crunchy flavor and texture.  We grow our macadamia nuts Certified Organic, which means we fertilize and feed our trees only certified organic ingredients, we weed-whack instead of spraying chemicals for weed control.  We believe the more nutrient rich soil the better the macadamia nuts are for your heath and better the flavor.

Macadamia nuts are grown in a variety of soils and conditions but macadamia nuts love water and good aeration.  Here on the Big Island of Hawaii, with its rich volcanic soils and tropical climate, does just that. The nuts are then picked off the IMG_2422ground by hand about every 6-8 weeks. They have a year round growing season although the quantity of nuts that fall is minimal in the summer.

Now, is harvest time. Our macadamia nuts have had plenty of rainfall this past year and growing conditions have been beautiful. Macadamia nuts are rich in Omega 3’s and 6’s in perfect balance and considered a superfood by some.  Our unique dehydrating process allows the nuts to maintain their vitality and brings out their true flavor.

Organic Macadamia Nut & Oil Recipes

Organic Macadamia Nuts & Oil Recipes, a chefs delight! Macadamia nuts & Oil are extremely versatile from nuts to cheese, butter, baking, stir-fry, popcorn, dessert, fish, etc…..

Here’s how we use macadamia nuts and oil here on Mahina Mele Farm..

Macadamia nut tips and hints

• Macadamia nuts can be substituted for other nuts measure for measure in most recipes and vice versa.

• Some recipes call for ground macadamia nuts. Simply put them in a food processor and pulse until desired consistency is achieved.

Macadamia Nut Butter

Blending for awhile  you’ll end up with nut butter-yum.

• If you do over-process, macadamia nut butter is delicious as a spread. No need to add anything to the butter but a hint of salt brings out more flavor we also add chocolate to make a chocolate macadami nut butter great with a spoon.

• Ground macadamia nuts can be used as a filler and flavor enhancer in ground meat, poultry and seafood dishes.We love Macadamia nut crusted fish…

Use ground nuts in pastry dough or sprinkle on the bottom of pie shells for a delightful change of taste.

• Our nuts are dehydrated but you may lightly toast nuts before adding to the recipe will yield a new flavor.

• Always let toasted nuts cool down before grinding or chopping to prevent them from becoming oily or pasty in texture.To toast: Spread nuts in a single layer on a baking sheet. Place in 350-degree F. oven. Toast until golden, about 12 to 15 minutes. When using a toaster oven, cut the time in half. It’s best to toast only what you need at the time as toasted nuts will not store as well as raw nuts.

• Macadamia nuts pair particularly well with coconut, chocolate, and fish.

Macadamia nut Oil is a high heat oil that can be used instead of other oils in baking to add a nutty flavor, it also it amazing with stir-fry and makes the best popcorn ( a family favorite!). We also use it for our salad dressing,

1 tbl sugar

1 tbl salt

3 cloves of garlic pressed

Mix together and let stand for 5-10 min

add 1 part balsamic   2 parts oil and shake or mix

You ll have the tastiest salad dressing!

Macadamia Nut Cheese

Macadamia Nut cheese is easy to make,,,

soak macadamia nuts for 1 hour

Blend macadamia nuts in blender with 1 cup water

put through cheese cloth ( what drips out is macadamia nut milk)

what is in the cloth is cheese, add salt and lemon to desired taste to help preserve the cheese.

make into patties and enjoy a soft delicious cheese great on crackers.

Your morning cup of coffee is a ritual.

Your morning cup of coffee is a ritual, it’s what gets you out of bed in the morning and what you look forward to the night before .The ritual is the way you prepare your coffee, its strength and intensity,  its unique to your taste and individual requests. Our rituals are what nurtures us, its the way we take care of ourselves.

I awake and watch this morning as my husband hand grinds the coffee, after he as measured it with his wooden coffee spoon, then allows it to steep in our french press. Finally as his gift  he hands me my first cup of Kona Rose Coffee. Its a deep and spiritual pleasure, that first sip, the way I hold it in my hand and breathe in deeply. I wonder if its the coffee I’m drinking and the way we have nurtured each coffee tree, picked each ripe berry and fermented it. Raked the coffee for hours and days until it was dried and then roasted to perfection. I’m sure its all these things that make this morning cup of coffee a gorgeous ritual but its this quality that no matter if you have had direct contact with each plant it shares itself with anyone who drinks it.

Its the quality of the coffee….. there’s no denying, no deceiving of the senses, no greater way to explain, its the truth and integrity that makes this ritual.

Why is Kona Coffee so special? The answer is It is special because Kona coffee makes up less than 1% of all the coffee grown in the world. It grows in exotic, volcanic soil, it’s delicious to the pallet and once the crop is gone… it’s gone for the season.
